Pierre Chavin is the bold creation of oenologist Fabien Gross and Champagne‑born entrepreneur Mathilde Boulachin, established in 2010 in Béziers, in France’s Languedoc‑Roussillon region. Blending traditional winemaking with a forward‑looking vision, the duo set out to craft wines that deliver all the pleasure and complexity of classic French wine - but with innovative, mindful alternatives.
"The grapes are harvested at night to preserve their freshness in the cool temperatures. Vinification and production follow traditional methods, after which a delicate de‑alcoholisation process using the Spinning Cone technique gives Petit Chavin its distinctive character.
